Hassleback Potatoes

We saw this in a magazine and thought it sounded interesting!  We have yet to try it though.

Set the oven to 200C.  Peel two medium sized baking potatoes, cut in half lengthways and place them  cut side down on a chopping board.  Using a kitchen knife, make thin slices across each potato, but only cutting 3/4 of the way down, so the pieces are joined at the base.  Transfer the potatoes to a roasting tin, pour over a little oil and melted butter or a spoonful or two of goose fat, then roast for approx an hour until softly tender inside and crisp and golden outside.  Baste the potatoes several times as they cook.  They serve it with oven baked Camembert and air dried ham.

They are also known as Toast Rack potatoes!
